β-Galactoaidases (EC 3.2.1.23) are presentin various sources including plants, animals, andmicroorganisms. These enzymes have attracted particular interest in the industrial applications owingto their capability of catalyzing hydrolysis of β(1，3) and β(1,4) galactoayl bonds, as well as enzymatic condensation and tranaglycosylation reaction.Usually,β-galactosidases are used for the hydrolyaie of lactose in dairy products such as milk and cheese whey, and aslo used es a tool in molecular biology such .colorimetric assays. Furthermore,β-galactoaidases have been applied in transglycoaylation of enzymatic synthesis such as the synthesisof galactooligosaccharides (G0S).
