摘要

This paper summarizes some important research results relating to the sugar industry from major sugar research groups around the world during the last 30 years. It explores the impact of selected discoveries from scientific, technical and commercial viewpoints. It discusses how "rediscovering" or revisiting older information has been of benefit to the industry when combined with modern updating. It is critically important to maintain information databases. It is equally important to maintain the flow of information to the industry as well as to younger scientists and engineers who will be responsible for future advances in the industry. The most important ways to maintain a flow of information and knowledge in the sugar industry, as with any industry, are publication of research conclusions and data (as in SIT, SPRI and other proceedings), mentoring of young technologists, continued research, keeping up with the latest scientific and engineering concepts, and travel and exchange of information at meetings. Closing off any of these avenues of information transfer will choke off the flow of innovation and creativity that keeps any industry vital and profitable. In developing the information for this paper, the authors solicited input from cane and beet sugar processing research institutes around the world. The authors are grateful to those who replied, who obviously put a great deal of time and thought into the question. Of course, no list of this sort can completely cover all the relevant advances, but we hope to have touched on some major highlights and shown how important continuing research and innovation are to this industry.
