Research is required to provide fortified products for the well being of the consumers. This study was aimed to obtain zinc and calcium enriched apple slabs by a vacuum-impregnation process. Apple slabs were placed in a sucrose solution (50 °Brix) containing different concentrations of either calcium (0 to 100 mg/100 g) or zinc (0 to 37.5 mg/100g). The dehydration-impregnation process was carried out at a vacuum pressure of 50 cm Hg and the impregnation and relaxation times varied between 3 and 45 min. The impregnation-dehydration process was performed at atmospheric pressure for reference. The highest levels of calcium and zinc were limited to 120 ppm and 53 ppm respectively, in apple slabs subjected to the process at atmospheric conditions for 72 min and high mineral concentrations in sucrose solutions. High impregnation levels of calcium (383 ppm) and zinc (220 ppm) were achieved using the vacuum-impregnation process. The vacuum-impregnation process will lead to apple slabs with improved mineral content. The experimental values of the dehydration parameters of apple slabs are further discussed here.
