Some of the most dramatic changes in food processing in the last quarter century have quietly occurred through the use of improved instrumentation, data acquisition and control. In the not too distant past, the cost of data acquisition, instrumentation and controls was prohibitively expensive. This paper will examine how inexpensive, often-portable instrumentation was used to collect food process data. Since data are often collected in a snapshot form, discussion of the role of engineering judgment and experience in analyzing the information is provided. The importance of developing a systematic method for reviewing processes is considered. A spectrum of food processing unit operations including conveyor dryers, spray dryers, dough mixers, pumping systems, coolers, freezers, ovens will be used to illustrate.
