Available water is one of hte important factors controlling the growth of microorganisms in foods.Microorganisms respond to reduced water activity,a_w,in a number of ways,and vary significantly in their minimial a_w limits that allow growth,reflecting differences in osmoregulatory capacities.There are also differences in the response of microorganisms to different solutes.Preservation systems in foods oftne make use of combinations of inhibitory factors,thereofre water activity may be just one of several factors that interact to prevent microbial growth.The development of predictive modeliing over the past two decades has facilitated data handling and interpretation such that interactions between these factors can be more easily anticipated,by interpolation.
