At the end of the 20th century,food research is the beneficiary of modern advances in computer science,in biotechnology,and in new areas of material science,including techniques allowing analysis and mainipulation of structure at submicroscopic levels,and techniques allowing analysis of trace components at limits approaching single molecules.A major task of the food scientists in the coming decades will be to use these modern advances to solve major problems in understanding the relations between composition of foods and their functionality.The development of such understanding would allow the food industry to tailor performance of foods to psecific requirements of the human consumers,and to rationalize the production,processing and distribution of food products.
