The gelling and physical properties of alginate gels depend on the conditions under which alginate gels are formed. A wide range of sodium alginate and calcium nitrate concentrations were used to study how some physicochemical properties of calcium alginate gels depend on the alginate and calcium concentration, and also on the ionic strength of the gelling solution. The kinetic of sol/gel transformation was a process controlled by the diffusion of metal ions into alginate spheres. It was described by the unreacted core model assuming an average particle radius, and by the modified unreacted core model allowing for the variation of the bead size.
