The amount of output of cltured freshwater fish in China was about 6.48 million mt in 1993. Most of the harvest fish is belong to the family of carps (Cyprinidae), includin silver carp (Hypophthalmichthys molitrix), bighead (Aristichthys nobilis), grass carp (Stenopharyngodon idellus), crucial carp (Carassius auratus) and carp (Cyprinus carpio), etc. According to the FAO fisheries statis-tics, the world annual output of silver carp was 1.6 million mt, grass carp 1.25 million mt and bihead 0.78 million mt in 1992. These species of culture freshwater fish are put a large quantity on the market and have a cheaper cost than other protein foods such as marine fish, live stock and poultry meat in China.
