Many officinal plants have been used since ancient times for different purposes. They are also employed as source of active principles for the production of drugs and pesticides as well as in alternative medicine and as aromatic additives in food. Among all uses the production of essential oils is the most interesting. Essential oils are complex mixture of natural compounds mostly of plant origin, extremely volatile and with an intense scent. A number of plants that produce essential oils belong to the Apiaceae family. Cumin (cuminum cyminum) was much loved by the Roman. This annual plant is indigenous to the upper regions of the Nile and spread very early to India and China. Thus is native to northern Egypt and Turky. Today it is cultivated in the Mediterranean region, Iran and Pakisthan. Cumin seed, which contain high amounts of carotene, and iron is used for diarrhea, indigestion, and headaches. Hot Cumin water is excellent for colds and fevers, sore throat, reduce nausea in pregnancy, pultice, hiccups and stimulants appetite. In this work we collected five types of Cumin seed from 5 different regions of Golestan (sample A,B,C: Agh ghala, Maraveh tappeh, Gonbad) and Khorasan province (sample D,E,Jowein,Sabzevar). Their essential oils were obtained by steam distillation and analysed directly bycapillary GC Result of GC analysis are reported in Table 1.
