摘要

Through an analysis of the nutritive quality contained in the Tartary buckwheat produced in Sichuan Province, it is found that the average content of protein and lysine in the seed is 14.21% and 0.58% respectively. In addition, there are 19 kinds of lysine in the seed of Tartary buckwheat produced in Sichuan, in which 8 kinds of lysine necessary for human body are all contained. In the seeds of the 28 kinds of Sichuan Tartary buckwheat, the highest content of rutin is up to 2.91% and the lowest is 1.07%, 2.02% in average. There are over 13 kinds of mineral substances and microelements, which constitute the rich nutritive values of Sichuan Tartary buckwheat. The author of this pa per also gave an expatiation for the advantages of development and utilization of Sichuan Tartary buck wheat and introduced the main Tartary buckwheat products of Sichuan Province.
