The development of microbial population and changes in the concentration of lactate and acetate on fillets of Mediterranean gilt-head seabream (Sparus aurata) and bogue (Boops boops)stored under modified atmospheres (MA) or in vacuum at 3 and 10 deg C were studied. Pseudomonads, enterobacteria, lactic acid bacteria, Brochothrix thermosphacta and yeasts were members of the population. The concentration of lactate decreased but that of acetate increased during storage. This reverse trend between the concentration of L-lactic and acetic acid could be used to estimate the quality of fish in a microbiological context.
