Growth of total viable microorganisms and lactic acid bacteria (LAB) were determined on butterflied, skin-on CO_2 modified atmosphere packaged (MAP) rainbow trout (Oncorhynchus mykiss) fillets stored at 0 deg C. Counts on plate count agar (PCA; total viable count) and nonacidified MRS agar (total LAB count) were identical at all sampling times whereas counts on acidified MRS agar (aciduris LAB count) were at least 2 Log units lower. Thus, the predominating microbial flora was nonaciduric LAB. Of 340 isolates from PCA and nonacidified MRS only 20 were not LAB. Of the LAB isolates, 101 strains were further identified by phenotypic tests.
