Salt is one of the important environmental factors in hypertension. As early as 2500 years ago, an ancient Chinese medical book (Huang Di Nei Jing) asserted that "the pulse is felt like the tight string in people who love to eat much salty food". This assertion was later demonstrated by the observations in modern medicine of patients with hypertension, which confirms that the ancient Chinese doctors had realized the importance of salt in disease.During the past hundred years, it has been demonstrated that in population exposed to low salt diet, the prevalence of hypertension is low, blood pressure does not rise with the age, or the slope of blood pressure elevates with age at much slower rate and that blood pressure decreases in majority of patients with hypertension after the salt in the diet is reduced.
