摘要

Colorants present in a sugar cane variety play a significant and vital role in deciding the quality of sugar in addition to other factors such as technical parameters controlling during milling, processing and later stages of sugar manufacturing. Juice color is a varietal character and hence different varieties have varying amounts of coloring matters associated with them. During the course of staling, color level in sugar cane increases the rate of which becomes faster after a certain period, which in our case was found to be 48 hours. This increase in color depends upon the variety in question. During the crashing season 1998-1999, 1999-2000 and 2000-2001 a correlation was found between ICUMSA color value of sugar produced and reduction in particular high colored sugar cane variety CoS 91269.
