摘要

To estimate the summary effects of antioxidants (reductones), a cyclovoltametric method to determine the potential and an electrochemical option of the Indicator-Time-Test (ITT) were developed. In contrast to the measurement of the potential without current the cyclovoltametric method was highly reproduceable. This determination of the potential and also the electrochemical ITT can for example show the oxidative deterioration of the wort if special aeration technologies or flotation are used. In every brewery laboratory the electrochemical measurements which were automated could give a fast and easy overall view of the state of oxidation of beer and intermediate products.
