The effectiveness of carbohydrates (CHO) in foods to enhance performance~1 depends on the fraction of the glucose formed upon ingestion that spares muscle glycogen usage. This sparing is reflected primarily in extending endurance and is achieved by glucose functioning as a metabolic fuel and/or as a precursor of glycogen~2, instead being shunted into other biochemical pathways. The sequence from food to muscle involves CHO release, conversion to glucose, competitive glucose utilization, and glycogen metabolism. The time course of this sequence is partly reflected in the rise and fall of plasma glucose following ingestion ,the profile of which generally depends on the food's glycemic index (GI). Consequently, a carbohydrate food that would function optimally as an energy supplement should be able to modulate glucose uptake and affect the rates of glycogen depletion and repletion.
