Among the dried fruits consumed in India, raisins have been one of the most important items. Drying of grapes is the most important process for preparation of raisins. An experiment was conducted at IARI, New Delhi to study the effect of different methods of drying of grapes to produce raisins. In this experiment different methods viz. Open rack drying, solar cabinet drying etc. have been used for drying of grapes. Several treatments such as ethyl oleate, sulfur and milk treatments were also followed to observe the effect on the quality of the produce. It was found that grapes treated with ethyl oleate took minimum time in drying. Besides, the drying of grapes was found better in solar cabinet drying.
