Chicorium intibus is a plant great of economic potential because its roots contain arnfructoligossacharide named inulin, which is used as an ingredient for sugar and fatrnreplacements. Inulin has as many nutritional benefits as those associated to a high fiberrndiet, stimulation the bifidobacteria growth and decrease of blood cholesterol levels. Thernobjective of this paper was to prepare a stabilized dry form of inulin. The chicory wasrnharvest and the roots were prepared to aqueous extraction and vacuum evaporation untilrn22°Brix. The extract was formulated with maltodextrin and modified starch ingredientsrnto be spray dried, according to the experimental design methodology comprising 4rnfactorial, 4 axial points and 3 repetitions at the central point. The independent variablesrnwere inlet/outlet temperature (Ti/To) and ingredients percentage (wall material). Therninulin retention was determined by HPLC and the proportion of inulin mass in the feedrnand inulin mass in the powder ranged from 1.59 to 2.45 (dry basis). The temperaturernranged from 186 to 214oC and the wall material percentage from 8.62% to 21.38%.
