The advent of yeast transcriptomics or yeast gene expression monitoring provides anrnopportunity to use the yeast gene expression pattern during fermentation and lagering as arn'biosensor' for the health of a beer fermentation. The lack of transcription studies under beerrnfermentation conditions and the hybrid nature of most commercial brewers yeasts, howeverrnlimit the use of DNA arrays based on the published sequence of S. cerevisiae. In this study therntranscriptional response of a haploid laboratory strain of S. cerevisiae has been examinedrnunder a variety of nutrient limited chemostat conditions typically found in beer fermentations.
