The relationship between the malting parameters and ratio of the large and small starchrngranules were followed in the endosperm of caryopses in 12 varieties of spring and winterrnbarley (Hordeum vulgare L.) of Czech, German and British origin. Starch granule sizerndistribution was measured by two principally different methods of Low Angle Laser LightrnScattering (LLALS) and Gravitational Field-Flow Fractionation (GFFF) during a three-yearrnperiod. Increase in a large starch granule fraction in non-malted caryopses of spring barleyrnwas in the followed set of varieties accompanied with statistically significant decline in valuesrnof extract, glycide extract, relative extract at 45 °C, Kolbach index, modification by thernCarlsberg's method, wort colour and starch content. The more favourable (higher) ratio ofrnlarge starch granules in two and six row winter varieties is not utilized for creation of extractrnlikely due to a lower activity of cytolytic and proteolytic enzymes. However, the statisticalrncorrelations found between the followed technological parameters and starch granule sizerndistribution were rather low.
