From the quality of rice, state before processing,and rice processing technology,milling equipment and operationrnmanagement level,the causes of broken rice was analyzed. For these reasons, we put forward some technology methods andrncountermeasures to decrease broken rice during rice processing.%从稻谷本身的品质,稻谷加工前的状态,稻谷加工工艺、碾米机械和设备的性能及人员的操作管理水平等几个方面分析了碎米产生的原因,针对这几个方面的原因,提出了减少稻谷加工过程中碎米产生的技术方法和应对措施.
