单宁改性明胶的性质变化研究

         

摘要

研究了单宁和戊二醛改性对明胶性质的影响,探讨了单宁作为明胶改性剂的可能性,及单宁和戊二醛对明胶凝胶强度、凝冻和熔化温度、分子结构等性质的影响.结果表明:单宁(浓度为0.8 g/L)改性后的明胶的凝胶强度、戊二醛(体积分数0.075%)改性后的明胶的凝胶强度和与空白明胶凝胶强度差异不显著;单宁和戊二醛改性后明胶的凝冻和熔化温度都有所升高,而且单宁改性明胶的凝冻和熔化温度比戊二醛改性明胶低;单宁和戊二醛改性后明胶分子之间均形成大量氢键,分子质量增加.单宁可以作为明胶的改性剂.%The effect on the characters of gelatins modified by tannin and glutaraldehyde was studied in this paper.The possibility of modifying the gelatin by tannin was also researched. The gel strengths, freezing points, melting points and molecular structures of modified gelatins and glutaraldehyde were studied. The results showed that there was no significant difference in gel strengths among the control, modified gelatins by tannin (0. 80 g/L) and glutaraldehyde (0. 075%).Both the two modified gelatins were able to improve the freezing and the melting point, while the tannin modified one had a lower melting point. There were plentiful of hydrogenolysis and higher molecular weight portions in modified gelatins.It suggested that tannin can be a potential modifying agent of gelatin.
