The changes about the average size and the W0 of the sodium bis (2-ethylhexyl) sulfo succinate (AOT)/isooctane reverse micelles during the forward extraction were studied under different conditions in this work. And the correlation between the microstructure of the reverse micelles and the forward extraction rate was discussed in conjunction with the trends of the forward extraction.%以全脂豆粉为原料,在不同单因素条件下,对丁二酸二异辛酯磺酸钠(sodium bis(2-ethylhexyl)sulfo succinate,AOT)/异辛烷反胶束萃取体系分离提取大豆分离蛋白的前萃过程中胶束的平均粒径及W0进行分析,结合前萃率的变化,探讨反胶束的微结构与前萃率相互关系的变化规律.
