不同地区产榨菜产品品质的比较研究

         

摘要

The product qualities of mustard collected from Sichuan, Zhejiang, and Chongqing were studied by taste, texture quality, physical and chemical index, and multivariate statistics. The results of Kruskal-Wallis indicated that moisture content of samples collected from Chongqing were significantly higher than those in Sichuan (P<0.05),but the index of protein content showed the opposite trend (P<0.05). Although principal component analysis(PCA), canonical correspondence analysis(CCA), cluster analysis(CA), and multivari-ate analysis of variance (MANOVA)all showed that there were significant difference in mustard samples pro-duced from different regions (P<0.05), the mustard samples produced from Sichuan and Zhejiang had quite a lot in common. Thus, it could conclude that the regions have significant effects on the product profile characteri-zations of mustard.%通过对滋味、质构和常规理化指标进行测定,同时结合多元统计学方法,本研究对四川、浙江和重庆地区产榨菜产品品质的差异性进行了解析.通过Kruskal-Wallis分析发现,重庆地区产榨菜其水分含量较高(P<0.05),而蛋白质含量呈现出相反的趋势(P<0.05).通过主成分分析、典范对应分析、聚类分析和多元方差分析发现不同地区产榨菜其产品品质存在显著差异(P<0.05),且四川和浙江地区产的榨菜其品质较为相似.由此可见,产地对榨菜的产品品质具有显著的影响.
