In this experiment, fresh rose, XuanWei ham, powered sugar, flour as raw material, developed the best ratio of the Rose ham moon cake fillings by single factor and orthogonal experiments , The result showed that,when the flowers with ham ratio 10 ∶ 1, powered sugar 5 g, flour 15 g. the moon cake get the highest comprehensive evaluation, the moon cake have special flavour, good color ,good taste, sweet moderate and nutritious.%本实验是以可食新鲜玫瑰花、火腿、糖粉、面粉等作为主要原料,通过单因素实验和正交实验来研制玫瑰火腿月饼馅料的最佳配比,结果显示:当鲜花与火腿的比值在10∶1,糖粉为5 g,熟面粉为15 g时,玫瑰火腿月饼的综合评价最高,玫瑰与火腿味香郁,颜色佳,口感好,甜而不腻,营养丰富。
