野生和栽培蓝莓营养物质分析及抗氧化作用研究

         

摘要

In this thesis, with the wild blueberry and cultivated blueberries as the research object, the content of total phenols, total anthocyanins and vitamin C, were analyzed by Folin-Ciocalteu method, pH-differential method and high performance liquid chromatography (HPLC)method, respectively. Moreover, the DPPH free radical and superoxide anion free radical of two kinds of blueberries are studied. The results indicated that:1) The content of protein and total phenol of two kind of blueberries are all very high , the content of protein and total phenol of wild blueberry were 5.64 mg/g and 5.44 mg/g respectively , and the content of protein and total phenol of cultivated blueberries were 6.42 mg/g and 5.79 mg/g respectively. The protein and total phenol content of cultivated blueberry were slightly higher than that of wild blueberries; total acid and anthocyanin content were lower than that of wild blueberries;But the total sugar content of cultivated blueberry was 21.3%higher than that of wild blueberry 12.2%. 2)DPPH free radical rate of two kinds of blueberry extract were very close. Superoxide anion free radical clearance rate of the wild blueberry rate was higher than the cultivated blueberry by 7.86%.%以野生蓝莓和栽培蓝莓为研究对象, 通过Folin-Cioealteu法、pH示差法和高效液相色谱法分析蓝莓中的总酚、总花色苷和VC等功能成分的含量.并进一步对比两种蓝莓的甲醇提取液对DPPH自由基和超氧阴离子自由基的清除作用. 试验结果表明:1) 两种蓝莓中蛋白和总酚含量都很多, 野生蓝莓中蛋白和总酚含量分别为5.64 mg/g和5.44 mg/g;栽培蓝莓中蛋白和总酚含量分别为6.42 mg/g和5.79 mg/g.栽培蓝莓中蛋白和总酚含量略高于野生蓝莓,总酸和总花色苷含量低于野生蓝莓.另外,栽培蓝莓总糖含量为21.3%明显高于野生蓝莓12.2%.2)两种蓝莓提取物的DPPH自由基清除率非常接近.野生蓝莓的超氧阴离子清除率比栽培蓝莓高7.86%.
