We discuss the application of HACCP in frozen mutton production and quality control of Xilingol frozen mutton, five critical control points in frozen mutton involve in Quarantine before slaughter, viscera testing, carcass testing, segmentation, refrigerated. The results show that it will ensure the quality of frozen mutton effectively.% 探讨HACCP体系在本地区冷冻羊肉生产及品质控制中的实施和应用效果。在冷冻羊肉的生产中,通过宰前检疫、内脏检验、胴体检验、分割、冷藏5个关键控制点实施监控,能够有效地确保冷冻羊肉的品质。
