花斑副沙鳅肌肉营养成分分析与评价

摘要

The nutritional components in the muscle of Parabotiafasciata Dabry (n =30) was analyzed and the nutritional quality was evaluated by conventional and biochemical analytical methods. It was showed that the content of moisture,crude protein and crude fat, crude ash in the fresh muscle of P. fasciata were 76. 25％, 20. 73％, 1.25％ and 1. 62％,respectively(wet weight). 18 amino acids were found in the muscle, the content of total amino acids in fresh muscle was 22. 58％ (wet weight). The first limited amino acid was Trp. The essential amino acids index (EAAI) was 69. 73. The ratio of BCAA/AAA is 2. 37. The content of 4 delicious amino acids (DAA) in fresh muscle was 9. 35％ ( wet weight). 6 saturated fatty acids (SFA), 3 mono-unsaturated fatty acids (MUFA) and 7 poly-unsaturated fatty acids (PUFA) were found in the muscle. The contents of PUFA in fatty acids were 25. 10％, and the ratios of DHA and EPA to the total fatty acids were 5. 20％ and 4. 92％, respectively. The components of major and trace elements in the muscle were reasonable.It was indicated that P. fasciata was one of the freshwater fishes with good taste and nutritive value.%采用常规的生化分析方法测定了30尾花斑副沙鳅(Parabotia fasciata Dabry)肌肉的主要营养成分,并对其营养价值进行综合评价.结果显示:花斑副沙鳅肌肉中水分、蛋白质、脂肪和灰分的含量分别为76.25%、20.73%、1.25%和1.62%(质量分数,鲜样).肌肉中含有18种氨基酸,氨基酸总量为22.58%(质量分数,鲜样),肌肉的第一限制性氨基酸为色氨酸,必需氨基酸指数(EAAI)为69.73,氨基酸的支/芳值(BCAA/AAA)为2.37,4种鲜味氨基酸(DAA)总量为9.35%(质量分数,鲜样);肌肉中主要含有16种脂肪酸,肌肉脂肪酸中多不饱和脂肪酸(PUFA)的含量为25.10%,其中二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)的总量为10.18%.肌肉中常量和微量元素含量丰富且组成比例合理.
