花生乳复合发酵酸奶的研制

         

摘要

Fermented compound yogurt with peanut milk and defatted milk as main raw materials is studied.The reasonable prescription sterilization condition and type and quantity stabilizer are determined.The suitable technological conditions are determined by orthogonal test,and the quality of product is evaluated.%以花生乳和脱脂乳粉为主要原料研制复合发酵酸奶,确定了合理的配方,并对原料的灭菌条件、稳定剂的种类和数量进行优化.应用正交试验法,选择了适宜的发酵工艺条件,并对产品质量作了评价.
