阿勒泰脂臀羊脂肪酸组成及挥发性风味物质构成初探

         

摘要

Fatty acid and volatile component of fat in Ahay fatrumped sheep was studied by solid phase microextraction ( SPME ) - gas chromatography ( GC ) - mass spectroscopy ( MS ). The results showed that myristic acid, palmitic acid, stearic acid, oleic acid, linoleic acid and linolenic acid were main fatty acids, content was 8.9%, 13.5%, 34.9%, 2.4% and 1.3%, respectively. Volatile components were mainly composed of cyclobutanol, cyclohexane, ethyl acetate, valeraldehyde, toluene, acetal- dehyde etc. , 26 kinds of volatile compositions were found in fat of Xin -jiang Ahay fatrumped sheep.%利用顶空固相微萃取(SPME)-气相色谱(GC)-质谱(Ms)联用等技术方法,对新疆阿勒泰脂臀羊尾部脂肪脂肪酸的组成和挥发性成分进行研究,结果表明:脂肪酸主要由肉豆蔻酸、棕榈酸、硬脂酸、油酸、亚油酸和亚麻酸构成,各种脂肪酸占总脂肪酸的百分数分别为8.9%,23.6%,13.5%,34.9%,2.4%和1.3%,羊脂的挥发性成分主要由环丁醇、环已烷、乙酸乙酯、正戊醛、甲苯、乙醛等26种挥发性成分组成。
