近年来，我国食用菌产业发展迅猛，已成为世界第一大食用菌生产国，每年至少产生1500万吨菌渣。食用菌菌渣的合理开发与利用不仅可以广辟资源“变废为宝”，而且具有显著的生态学效应。目前，食用菌菌渣的循环再利用受到了越来越多的关注，并已形成多种利用模式。本文介绍了食用菌菌渣的基础特性及综合利用现状，探讨了其利用过程中存在的问题并提出建议，以期为食用菌菌渣的高效利用提供理伦依据。%In recent years,with the fast development of edible fungi industry,our country has become the largest producer of edible fungi in the world.At least 15 million - tons edible fungi residues were pro-duced annually.The reasonable development and utilization of the residues can not only get more useful re-sources but also produce significant ecological effects.Now the recycling of edible fungi residues has gotten more and more attentions and formed several patterns.In this paper,the basic characteristics and comprehen-sive utilization status of edible fungi residues were introduced,then the exist problems in the utilization process were discussed and the suggestions were put forward,which could provide some references for the efficient uti-lization of edible fungi residues.
