随着人类社会的进步，食品安全已经成为世界性的公共卫生问题，不仅影响到人类的健康，而且关系到国家的安全及稳定，大力发展科学技术，研究新检验方法，快速推广普及有效检测技术越显重要。本文介绍了免疫检测技术、分子生物学方法、快速测试片法、电阻电导测定法四方面的检测方法，并评述了他们的特点。随着生物等新技术新方法在食品微生物检验领域应用，文章对近几年食品微生物检测技术和方法进行介绍，这样做有效的提高了检测效率和检验速度。%With the progress of human society, food safety has become a worldwide public health problem, not only affecting human health, but also concerning the security and stability of the country. Energetically developing science and technology, new test method, fast popularization of effective detection technology is more and more important. This paper introduces the immune detection technology, molecular biology method, quick test method and resistance conductometry test method, and their characteristics are reviewed. With the application of new technology and new method in the field of biological and food microbiological examination, the article introduces food microbiological detection techniques and methods in recent years, which can improve the detection efficiency and the test speed.
