How important is an airport's F&B offering to customer service/passenger satisfaction levels? It's absolutely critical. While other non-aeronautical revenues may make a larger contribution to the bottom line, the impact F&B has on the impression an airport creates is disproportionately much greater. An excellent cup of coffee, served well (or indeed, a terrible one with poor service) will set the tone for the rest of the journey. In general, do airports do F&B well? There's still room for improvement in areas, but standards are generally high, and getting ever higher. The airports that do F&B well, whether that's by working with Michelin-starred chefs to create outstanding new restaurants, or creating pop-up kitchens to showcase the best of a city's cuisine, can give the downtown culinary stars a genuine run for their money.
