Restaurants and food franchises have become ubiquitous in public spaces around the world, whether one is visiting a museum or concert hall in Europe, Asia or North America, or places of interchange, such as railway stations and airports. Gail Satler discusses the spatial and social transformation that the placement and design of these dining spaces and food stalls have effected, as they invite and guide movement not only within their immediate environment, but also across the greater cityscape.
