Cryogenic freezing is here to stay, because consumers want the product quality, novelty and low prices that cryogenics make possible. Cryogenics can improve the quality of frozen food, and make novel products that are not possible with conventional freezing techniques. Cryogenic refrigeration uses expandable gaseous refrigerants at temperatures generally below -80℃. Perhaps surprisingly to engineers brought up in the tradition of mechanical refrigeration, cryogenic freezing is often the cheaper method, especially under the volatile business conditions of the frozen food market. But despite these advantages, many refrigeration engineers still find it difficult to see cryogenics as "proper refrigeration". By explaining the principles of cryogenic freezing and the research that is being done on topics such as closed-cycle air refrigeration, this paper emphasises the important contribution of cryogenics to the whole field of refrigeration. If we can recognise when to use mechanical refrigeration and when to turn to cryogenics, we will be able to "freeze without frontiers". We will keep our customers happy, and we will ensure a prosperous future in the growing market for frozen food.
