Food art-corn palaces, butter sculpture, and crop art-has received very little attention from scholars. This is not surprising as it is located at the odd intersection of art history, folklife studies, agricultural history, food history, American history, and, yes, vernacular architecture studies. Pam Simpson discovered the topic while writing about the 1904 St. Louis World's Fair for her dissertation and vowed that she would return to study it in more depth. After an impressive career spent documenting subjects that range from historic architecture in Lexington, Virginia, to imitation building materials at the turn of the twentieth century, Simpson did precisely that.
