摘要

Fenugreek gum was first isolated from Egyptian Fenugreek seeds. It was then subjected to chemical modification via carboxymethy-lation in aqueous and nonaqueous media using different concentrations of mono- chloroacetic acid and sodium hydroxide. Results obtained indicate that the extent of Carboxymethylation reaction, expressed as degree of substitution (D. S.), increases by increasing the concentration of mon-ochloroacetic acid and sodium hydroxide. Reaction medium does also affect the D. S. Carboxymethylation renders the Fenugreek gum water soluble irrespective of the D. S. Pastes prepared from the carboxymethyl derivatives are characterized by non-Newtonian pseudo plastic behaviour. Apparent viscosity relies on D. S. and reaction medium.
