Harsholm, Denmark-based Chr. Hansen recently introduced FruitMax Cranberry WX and FruitMax Blueberry WS, two novel coloring foodstuffs suitable for confectionery. FruitMax Cranberry WS's high concentration from processed black carrot roots allows for a low dosage in the application. The product has a deep red shade and is more stable to light and heat than most other red fruit colors. FruitMax Blueberry WS is a pure grape juice concentrate and has a bright violet hue.
