It's probably safe to say that most American consumers have never seen a truffle, that prized underground fungi that chefs throughout the world use to enhance their prized recipes. Add the adjective chocolate to it, however, and the numbers change considerably. Few consumers have not savored that queen of chocolate, the chocolate truffle. Yet, given the varieties that are out there today, there just doesn't seem to be any connection between the two. In truth, the original chocolate truffle was developed as a simple ganache ball rolled in cocoa powder. Thus, the final product actually resembled its savory namesake.
