European-style chocolate houses never really caught on in the Americas. When chocolate houses began to make a resurgence in Europe a little more than 10 years ago, Moonstruck Chocolate Co. in Portland, Ore., began to formulate the concept of consumers eating high quality chocolates in a social setting instead of at home like Americans were used to. So, in 1993 Moonstruck's original owners Deb and Bill Simmons contacted Moonstruck's current master chocolati-er Robert Hammond, who was then working as a culinary educator in Portland, and shared their idea of bringing really fine chocolate made from superior beans at a high cocoa content to the marketplace. Hammond immediately was sold on the idea.
