Recently Dairy Foods had the opportunity to visit Cathy and Paul Kalenian, owners of X-Cafe, for a cup of Java and a tour of their Portland, Maine, facility. X-Cafe roasts, grinds, extracts, filters, and packages coffee for the Ready-To-Dispense (RTD) beverage world. They package the extract in a shelf stable pouch, using a patented process utilizing only pure hot water and high pressure to extract every ounce of flavor.
