The dairy industry faces some of the most challenging mixing applications - bulk powder dispersion, minimising aeration, and with the increasing emphasis on low-fat and fat-free products, widespread use of thickening and stabilising agents to replace the bulking effect and texture (or "mouthfeel") of fat. These tasks must also be carried out under a sanitary environment, adding to the difficulties, according to equipment supplier Silverson. One such product is the Silverson ultra hygienic high-viscosity in-line mixer, engineered to process higher viscosity products in the food and chemical industries. The HV In-Line is based on the EHEDG and 3-A certified UHS series of mixers, which comply with FDA and cGMP guidelines. The difference is the new mixer's pumping rotor design, which substantially increases its flow capacity as well as providing the ability to process higher viscosity mixes. "The flow rate of the mixer remains high as product viscosity rises," says Matt Smith, international sales director, Silverson Machines.
