In summary, the trial proved that Tomat-O-Red natural colours may withstand demanding processing and storage con-ditions. They have a longer shelf life and offer more packaging, display and storage flexibility than their artificial counter-parts. This has implications for manu-facturers of UHT milk products that may have been deterred from switching from artificial to natural colours due to quality and stability concerns. From a marketing and positioning per-spective, this may open up opportunities for developing milk beverages with a ‘natural’ or ‘free from’ sell. Tomat-O-Red can be declared as ‘lycopene from red tomatoes’ on the label, allowing com-panies to achieve clean label status. It also gives manufacturers of UHT milk products access to the chiller cabinet, and with it, the chance to give their products a fresher and more natural positioning.
