When formulating ice creams, avocado flavour is not the first one that springs to mind. Yet, in the US, Ramar Foods has launched an avocado ice cream, which joins its Magnolia brand flavours that include tropical-inspired flavors such as coconut, lychee and Thai tea. More commonly, ice cream makers, along with other dairy processors are developing products with lower sugar content, which means the flavours they employ must step up to help keep the mouthfeel and sensory perception to the standard that consumers prefer and will pay for.
