Butter Buds natural dairy concentrates enhance the flavour and texture of low fat ice cream, according to a recent study. The results of the study, which was carried out by the College of Dairy Science at Anand Agricultural University in India, demonstrated that the addition of Butter Buds to ice cream produces a rich flavour with a fuller, more complex mouth feel perception rnsimilar to that produced by fats. The study compared full fat ice creams with approximately 10% fat to low fat ice creams with 2% fat made with Butter Buds and Cream Plus.
