The first part of Ernest Mann's two part lactic beverages overview. Interest in lactic beverages -- both conventional and Functional -- is growing very quickly and many new products are coming on the market. The first part of this two part review willdeal mainly with the more conventional market milk products including flavoured milks yogurt drinks and fermented milks. The second part will look at functional products although it has to be said that the dividing line between the former and the latteris becoming increasingly blurred Indeed someone recently described ordinary market milk as the perfect functional food and there is some truth in that. However, it is probably true to say that most functional milks either contain certain enhanced or special ingredients or have one or more ingredients removed to improve the health and wellbeing of the consumer.
