摘要

The old adage that 'the army marches on its stomach' is as true today as it ever was, and society as a whole is taking a much greater interest in where its food comes from and how it is produced. Government is also extremely keen to develop sustainable food chains as a way of cutting down on CO_2 emissions and aiding local producers/suppliers.Most of the catering within 43 (Wessex) Brigade is provided by contractors, but there are opportunities to purchase food from local sources rather than through the central contracts. The project explored that flexibility with a view to providing more choice for army personnel and, equally importantly, to support local food producers and suppliers.
