It is with great pleasure that I write this OeDd-o ??editorial for thelaunched inaugural issue of the Journal of Experimental FoodChemistry, a new peer reviewed scLentL?c publication which aims togive the scLentL?c community the opportunity to disseminate theresults of their research by o??erLng a panoramic view of the trends,perspectives, innovative projects and new creative ideas that areemerging from food chemistry and in particular from experimentalaspects of the food chemistry.
