摘要

Effective cleaning and disinfection is a key measure for elimination of the pathogen Listeria monocytogenes in the food industry. Fagerlund and colleagues (e01046-17) demonstrated the failure of daily cleaning and disinfection to remove biofilms and eliminate Listeria and environmental bacteria from meat processing plants. During biofilm experiments, a predominance of bacteria having a high growth rate at low temperature, tolerance to cleaning agents, and the ability to form biofilms was observed using combinations of culture-based and molecular approaches. Imaging techniques illustrated the importance of hygienic design to avoid Listeria and biofilm development on conveyor belts.
