Thauera aminoaromatica MZ1T was previously isolated from an industrial wastewater treatment plant experiencing a severe episode of viscous bulking. In pure culture, the bacteria flocculate and produce large quantities of exopolysaccharide (EPS). Prombutara and Allen (p. 16461652) performed whole-genome sequencing of chemically mutated floc-deficient isolates of MZ1T and identified a putative EPS deacetylase gene ( tmz1t_3249 ) that complemented the mutation when supplied in trans . The findings suggest that modification of the exopolysaccharide may be sufficient to induce flocculation and drive episodes of viscous bulking by this organism and may reveal a new mechanism to address wastewater treatment plant upsets.Improved quantitative risk assessments for foodborne botulism hazards require better information on the concentration of Clostridium botulinum spores in raw food materials. Barker et al. (p. 16751685) have categorized raw food materials into homogeneous groups (e.g., meat, fish, or plant material, etc.) and constructed probabilistic models for spore concentrations by combining information from a literature survey of spore loads, from positive-control experiments that establish a detection limit, and from dedicated microbiological tests for real food materials. The posterior belief concerning spore loads centers on a concentration range of from 1 to 10 spores kg~(1).
